
Coconut Granola
Description
Granola is used as a breakfast or afternoon snack. It can be served with tea or coffee.

1. Preheat the oven to 160 degrees. Coarsely chop cashews and almonds. In a large bowl, mix together oats, cashews, almonds, coconut flakes, salt, and cinnamon, then set aside.

2. In a medium saucepan, melt the butter, agave nectar, and brown sugar until the sugar dissolves completely. Remove the mixture from heat and stir in the vanilla extract.

3. Pour the oil mixture over the oat mixture and mix.

4. Place the mixture onto a baking sheet lined with parchment paper, leaving several large clumps.

5. Bake the granola for 15 minutes. Then remove from the oven and stir with a fork, return the baking sheet to the oven for another 15 minutes. Take the granola out of the oven, stir once more, and bake for an additional 10 minutes.

6. Remove the baking sheet from the oven and let the granola cool completely. Once cooled, add chocolate chips and dried cranberries. Quickly stir with a spoon, then transfer the granola into glass jars or brown paper bags for storage.
