Coffee Marshmallow
Description
The recipe won't take much time. Coffee marshmallows, of course, have a pleasant coffee flavor and are not at all overly sweet. The tiny specks of coffee beans add a special touch of piquancy. It's very easy to make—just follow the step-by-step recipe and everything will turn out perfectly! This amount of ingredients yields 8 marshmallows, paired together. Serve chilled.
Instructions
- 1
Step 1

Prepare the ingredients.
- 2
Step 2

Pour room temperature water over the agar-agar and let it soak to swell.
- 3
Step 3

Remove the cores from the apples, place them in a covered dish, and bake in the microwave for 5 minutes.
- 4
Step 4

While the apples are baking, brew coffee; do not discard the coffee grounds, as they will be used later in the recipe.
- 5
Step 5

Remove the flesh of the baked apples.
- 6
Step 6

Blend the apple pulp into a puree, and if desired, strain it through a sieve.
- 7
Step 7

Add coffee grounds to the apple puree; if you prefer a less intense flavor, you can reduce the amount of coffee.
- 8
Step 8

Beat the egg white until frothy, then gradually add sugar and continue beating until stiff peaks form.
- 9
Step 9

Add apple puree and coffee to the beaten egg white with sugar.
- 10
Step 10

Beat the mixture until smooth.
- 11
Step 11

Pour the coffee into a saucepan, add sugar.
- 12
Step 12

Add the swollen gelatin to the saucepan and mix well. Heat while stirring constantly.
- 13
Step 13

Bring the syrup to a boil and simmer for about 5 minutes, though it may take less time; the syrup should thicken and become stretchy.
- 14
Step 14

Gradually pour the syrup into the egg white mixture while continuing to beat. Beat until the meringue mixture begins to thicken and the mixer leaves distinct, raised traces on its surface.
- 15
Step 15

Transfer the marshmallow mixture into a piping bag and pipe the marshmallows onto a prepared tray, preferably lined with parchment paper. Dry the marshmallows at room temperature for about 12 hours.
- 16
Step 16

Pair the marshmallows and roll them in powdered sugar. If desired, lightly sprinkle with cinnamon or cocoa.
- 17
Step 17

Serve coffee marshmallows with coffee—they will complement each other perfectly!
