
Quick Coffee Cake

1. 20 minutes before starting to prepare the cake, add instant coffee to room-temperature kefir and stir. Allow time for it to dissolve.

2. Beat two eggs into a fluffy foam, then add sugar and blend at high speed until the sugar dissolves.

3. The butter should be soft, slightly melted. Add it to the bowl with the eggs, then pour in the kefir in which the coffee has already dissolved. Mix everything with a blender until smooth.

4. Using a blender, mix the sifted flour with the resulting mixture. Stop when the mass becomes uniform.

5. To make the cake fluffy, add a teaspoon of baking soda to the batter, previously neutralized with 9% vinegar (about 3-4 teaspoons). Mix well.

6. Now you can take out the baking pan. Grease the bottom and sides with butter. If you are cooking in a multicooker, set the "Baking" program for 50-60 minutes, checking the doneness with a toothpick. If you are baking in an oven, the temperature should be 160-170 degrees; check the cake's readiness with a toothpick as well. There should be no raw dough inside.

7. After baking the crust, carefully remove it from the pan using a plastic or wooden spatula and let it cool.

8. To prepare the cream, mix 1-1.5 tablespoons of instant coffee with sour cream. Let it sit for about 20 minutes to allow the coffee to dissolve in the sour cream. Then immediately add 3-4 tablespoons of sugar or powdered sugar.

9. Cut the cooled cake into 2 parts, and soak the cut side of each part with cream. After 15 minutes, repeat the process to make the cake more moist.

10. Combine the cake layers and pour the remaining cream on top. Decorate with grated chocolate, nuts, or finely chopped dried fruits.
