Today, let's make a classic coffee cheesecake with dark chocolate ganache, baked in the oven and then chilled in the refrigerator. The combination of coffee, delicate cheese, and ganache made from dark chocolate, set on a base of chocolate cookies, gives this dessert an exquisite flavor, while a spoonful of rum adds elegance. I used mascarpone cheese, which in my opinion is the best base for a cheesecake. If preparing the dessert for children, simply omit the alcohol. Serve warm or chilled. Perfect with tea.

Crush the cookies and mix with the butter. The crumbs should be completely saturated with the butter.
