
Coffee cheesecake
Description
The baking is simple and quick. Preparing this cheesecake will require some skill, but the result will exceed all expectations. Can be served with tea or coffee.

1. Make the crust. Finely crush the cookies, chocolate, brown sugar, and nutmeg in a food processor. Add the butter and process for about 1 minute. Transfer the mixture to a pie dish. Wrap plastic wrap around your finger and gently press the mixture onto the bottom and up the sides to form an even crust.

2. Prepare the glaze. Bring the cream to a boil over low heat in a large saucepan. Remove from heat, add chopped chocolate and Kahlua liqueur. Whisk until the chocolate melts and the mixture becomes smooth and uniform. Pour 2 cups of the glaze over the chocolate dough. Freeze for about 30 minutes. Cover the remaining glaze and let it stand at room temperature for later use as decoration.

3. Prepare the filling. Place the oven rack in the center and preheat to 175 degrees. Using an electric mixer, beat cream cheese and sugar in a large bowl. Add flour and beat until combined. Mix rum, espresso, vanilla extract, and molasses in a small bowl, then add to the cheese mixture. Add eggs, one at a time, beating well after each addition. Pour the filling over the crust, place the pan on a baking sheet, and bake until the top is browned and edges are cracked, about 1 hour. Let cool in the pan for 15 minutes. Keep the oven temperature constant.

4. Prepare the frosting. Whisk sour cream, sugar, and vanilla in a medium bowl. Pour the frosting over the cheesecake and bake for 10 to 15 minutes. Chill for about 3 hours. Remove from the pan and decorate with chocolate glaze using a pastry bag.
