
Coffee cake
Description
Tasty baked goods for the whole family. The subtle coffee aroma gives this treat a unique scent. Despite all its charm, making a coffee cake is quite simple and quick. The ingredients are minimal and usually always on hand. Garnish the dessert before serving with chocolate, nuts, coconut flakes, or cocoa, if desired. If you are an avid coffee lover, be sure to try it—you’ll like it. It can be served with tea or coffee.

Prepare all the ingredients.

First, pour 250 ml of boiling water over the coffee and mix well. From this amount, you’ll need 50 ml for the sponge cake, and the remaining 200 ml will go to the soufflé.

Separately, in a deep bowl, beat the eggs with sugar for the sponge cake. Beat for about 7–10 minutes until a white foam appears.

Add 50 ml of brewed coffee and stir.

Add the flour.

Gently mix the dough until it reaches a uniform consistency, using motions from top to bottom.

Line the pan with parchment paper (I use a silicone mat) and pour in the batter.

Bake the crust at 180 degrees for about 30 minutes.

Let the baked sponge cake cool right in the pan. Then combine the cream and sugar. Whisk, add 200 ml of coffee and mix. Soak the gelatin in 200 ml of water in advance until it swells, dissolve it in a water bath and add it to the cream. Mix everything well and pour the creamy mixture over the cooled base. Place the dessert in the refrigerator for about 4 hours.

Once the top layer has set firmly, carefully remove the dessert, smooth the edges, and cut it into portions. The coffee cake is ready. I served it with coffee, garnishing the top with grated chocolate.
