
Coffee-Chocolate Walnut Pastries
Description
The pastry is simple and quick to prepare. Serve chocolate cakes with ice cream or whipped cream.

1. Preheat the oven to 160°C with the rack in the center. Line a 20 cm square baking pan with foil, grease the foil with butter, and place the pan on a baking sheet. Cut the butter into 5 pieces. Coarsely chop the chocolate. Set a bowl over a saucepan of simmering water. Add the butter to the bowl, top with the chopped chocolate, and stir occasionally until the ingredients are melted. Remove the bowl from the saucepan.

2. Whisk together with sugar using a whisk. Beat in the eggs, adding one egg at a time. Add vanilla extract, mix, then stir in the coffee. Add salt and flour, mixing until smooth. Stir in the chopped walnuts. Transfer the batter to the prepared pan and smooth the surface with a spatula.

3. Bake the pastries for 30 to 33 minutes, until a knife inserted into the center comes out clean. Remove the pan from the oven and let cool to room temperature. Then remove from the pan onto a cutting board and cut into 16 squares, each 5 cm in size. Serve the pastries at room temperature or slightly chilled. They are best enjoyed within 2 days of baking. Alternatively, you can wrap them tightly and freeze for up to 2 months.
