Pour cold clean water into the pot, then add sugar and coffee.

Stir and bring to a boil over low heat. As soon as the foam rises, immediately remove from heat—do not boil the coffee!

While the coffee is brewing, grate the chocolate on a fine grater. Why shouldn't you add chocolate pieces? Because they won't have time to melt, and if added at the very beginning, they might stick to the bottom and burn. So, add the grated dark chocolate to the coffee and bring it to a boil once again.

As soon as foam appears and starts to simmer, remove the pot from the stove. During this minute, the finely grated chocolate will dissolve completely.
