
Co-co Riesling (fried chicken legs)
Description
Since all the ingredients in this dish are very aromatic, the drumsticks take on an entirely new flavor. I strongly recommend sautéing the meat, onions, and mushrooms in a mixture of vegetable and butter, as this gives the ingredients a creamy aroma and makes them more tender. Don't hesitate to add wine when cooking the meat—the alcohol evaporates during cooking, leaving behind a rich wine flavor. Be sure to check it out.

1. Rinse the mushrooms, pat them lightly dry, and cut into four pieces. Cut the small onion into four pieces. Heat a skillet, then add a little vegetable oil and a small amount of butter.

2. Place the onion on a preheated frying pan, sauté for a few minutes on all sides, then set it aside. Add a little more butter, reduce the heat, and add the mushrooms.

3. Sauté the mushrooms slightly (7-10 minutes) and set aside. Add a bit more butter to the pan and lightly sear the chicken legs (until golden brown).

4. Heat butter and vegetable oil in a saucepan, add the chicken legs and season with salt. Add Provence herbs, pepper, and wine. Place the meat over heat and let the wine reduce by half.

5. Mix the sour cream with the chicken broth and add it to the meat. Cover the pot with a lid and let it simmer for 10 minutes. Meanwhile, chop the herbs. After 10 minutes, add the mushrooms with onions and the herbs, then mix well.
