
Mashed strawberries with sugar
Description
Ideal for winter pantry stock. This winter preserve is made without lengthy boiling, steeping, or sterilization. Everything is quite simple and quick. If you don't have a blender, you can run the berries through a meat grinder or simply mash them with a potato masher. Since the jam is not heat-treated, the berries must be completely free of any spots of spoilage or bruises. It must be stored in the refrigerator, because in the warmth it can simply ferment. Store in a cool, dark place.

Prepare all the necessary ingredients for making mashed strawberries with sugar.

Sort through the strawberries, discarding any spoiled or bruised ones. Place them in a colander and rinse under hot water. Let all the water drain off completely, then spread them on a towel until the strawberries are fully dry. There should not be a single drop of water on them.

Remove the green tops from the dried strawberries, carefully inspecting the berries once more.

Place the first layer of strawberries in a dish and sprinkle with sugar. Add another layer and more sugar. Repeat until all the strawberries are layered this way. Cover everything with a clean cloth and leave at room temperature for 2–3 hours.

Blend the berries with the sugar in a blender until smooth and the sugar has fully dissolved.

Thoroughly wash the jars and metal lids with baking soda and rinse. Boil the lids for 5 minutes over medium heat. Sterilize the jars using any convenient method, but by the time the jam is finished cooking, they must be dry.

Spread the mashed strawberries with sugar into jars, seal tightly, and store in the refrigerator.
