Strawberry rahat-lukum

The dish is prepared without unnecessary complications. Strawberry rahat lokum is a traditional Turkish sweet, commonly known as "Turkish delight." There's even a feature film with that title made about these candies. Although recently it was discovered that these sweets were actually invented in Cyprus. Be that as it may, strawberry rahat lokum is a very tasty and sweet treat, similar to jelly cubes, incredibly popular among children. It's definitely worth trying to make this delicacy, especially since it's very simple to prepare and requires no complicated ingredients. Good luck! The ready dessert can be served at the table.

    Puree fresh strawberries in a blender until smooth. If using frozen strawberries, slightly thaw them first, then blend together with the released juice.

    Add gelatin to the strawberry mixture and let it swell slightly. Then add 120 grams of powdered sugar and lemon juice to the mixture, stir well, and heat over low heat. Cook until the gelatin dissolves completely, but do not boil at any cost!

    Remove the mixture from the heat and let it cool. Then, using a mixer, beat for 5-6 minutes until the mixture becomes thicker and lighter.

    Take a convenient mold for setting, place parchment paper in it, then pour the strawberry mixture on top. Smooth it out and refrigerate for 5–6 hours to set.

    Remove the set strawberry rahat-lokum from the mold, sprinkle with powdered sugar, cut into cubes, and serve.
