
Strawberry pie with whipped cream
Description

1. Clean the strawberries and chop finely. Reserve a few berries for decorating the cake. Preheat the oven to 175 degrees.

2. In a food processor, combine crackers with 2 tablespoons of sugar. Add butter and process until the mixture resembles wet crumbs.

3. Transfer the mixture to a pie pan and press it firmly against the surface. Bake until the crust turns light brown, approximately 12 to 14 minutes. Remove the crust to a wire rack and let it cool.

4. Meanwhile, in a medium saucepan, combine 3/4 cup sugar, cranberry juice, 2 cups strawberries, cornstarch, and salt.

5. Using a potato masher, mash the strawberry mixture. Bring to a boil, reduce the heat, and cook over low heat, stirring, until the mixture becomes very thick, about 1 minute. Remove from heat and let cool slightly. Stir in the remaining strawberries.

6. Pour the filling over the cooled pie crust. Refrigerate the pie for at least 4 hours (or up to 1 day).
