
Strawberry curd
Description
First, sort and wash the strawberries, then blend them into a puree. Beat the eggs separately with a whisk. Then mix everything together in a saucepan and cook over low heat, stirring constantly.

Sort and wash the strawberries. Remove the stems.

Blend the strawberries with a blender. Rub through a sieve to remove the seeds.

Beat the eggs until smooth.

Combine sugar, seedless strawberry purée, and eggs. Mix well. The mixture will lose some of its color. The strawberry mixture will become lighter. Unfortunately, store-bought curd often contains food coloring to make it more visually appealing. Genuine homemade curd is pale but natural.

Place everything over low heat and, quickly whisking (without stopping for even a minute), bring the mixture to a boil. Remove from heat at the first sign of bubbles. The curd will thicken, but a spoon will not stand upright in it, of course.

Serve the curd to the table. It has a jam-like consistency. This curd is traditionally served with pancakes, cheese pancakes, poured over ice cream, or used as a topping for small fried pancakes. The curd can be eaten as a dessert.
