
Strawberry compote for winter
Description
The drink is quick and easy to prepare. The ingredients for the compote are calculated for two 2-liter jars; I find it convenient to seal them in small batches. If you prefer 3-liter jars, simply increase the recipe by one third. Many people skip the step of wrapping the jars in a blanket; in that case, you must sterilize the jars with the compote—about 5 to 7 minutes for a 1-liter jar and about 10 minutes for a 3-liter jar. You can substitute lemon acid with fresh lemon juice, 1 tablespoon per jar. Ready to serve.

Prepare everything needed for canning. Wash the berries and mint, and remove the stems.

Place 200 grams of strawberries into each sterile one-liter jar.

Add 60 grams of sugar to each jar.

Add 0.5 grams of citric acid each; the photo shows the amount in a spoon for one jar.

Place a sprig of mint on each.

Boil water; about 1600-1700 ml will be needed for two jars. Fill the jars to the brim. Cover with sterile lids, seal tightly, wrap in a blanket, and leave for 24 hours. Then move to a cool place for storage.
