
Strawberry Kissel
Description
The recipe won't take much time. One of the greatest advantages of kissel is that it can be made equally well from fresh or frozen berries. Freeze strawberries in season, and you can enjoy fresh, delicious strawberry kissel all year round. Kissel can be served either hot or cold—whichever you prefer. For quenching thirst, in my opinion, cold kissel is best, but if you're washing down some pancakes, hot kissel works well too.

Zest half a lime.

Boil water with sugar, then add strawberries, zest, and half a vanilla pod.

Meanwhile, dissolve the starch in a glass of cold water.

When our strawberry compote comes to a boil, remove the zest and berries from it. Pour the starch mixture into the compote.

Bring to a boil and remove from heat. Remove and discard the vanilla pod. The strawberry kissel is ready—just pour and serve :)
