
Strawberry Jelly Cake
Description
Strawberry jelly cake is the perfect dessert option for any celebration, especially in summer. Very easy to prepare, it will impress everyone with its sophistication and originality. I'm sure all your guests, upon seeing and tasting this cake, will ask for the recipe. At least that's what happened in my case. I highly recommend you make it too. The cake consists of three layers: at the bottom is a sponge cake, which you can either buy ready-made at the store or prepare yourself using a reliable recipe. The second layer is a light creamy strawberry mousse with pieces of fresh strawberries, and finally, the whole cake is topped with a thin layer of strawberry jelly. This cake is truly amazing—be sure to give it a try. The baking is done. Serve at the table.

Prepare all the necessary ingredients. I baked the sponge cake in advance and cut it to fit the size of the pan in which I'll assemble the cake. If you're assembling the cake in the same pan you baked the sponge in, there's no need to cut it.

Line the pan you'll use to assemble the cake with plastic wrap. This will make it easier to remove the finished cake. Place the cake layer on the bottom.

Dissolve the jelly in boiling water according to the instructions on the package. Usually, one packet of jelly is diluted with 400 ml of water. Stir thoroughly until the powder is completely dissolved.

Whip the cream with sugar until it slightly thickens. Then add about 2/3 of the jelly. For extra firmness, you can add a bit more soaked gelatin, but I didn't need it—the mousse set perfectly without it. As you can see, the cream mixture immediately acquired a beautiful pink color. You can also blend a small amount of strawberries in a blender and add them to the cream—it will be delicious too.

Pour the resulting creamy mixture over the biscuit base. Refrigerate for 20 minutes; during this time, the creamy mousse will slightly set.

Arrange the strawberries on the surface and gently press them down. Refrigerate for 40-60 minutes until the mousse sets.

Then pour the strawberry jelly on top and refrigerate until completely set.

I left it overnight, and in the morning I had a delicious and stunningly beautiful strawberry jelly cake ready.
