
Strawberry Cheesecake with Cottage Cheese (No-Bake)
Description
The pastry is prepared simply and quickly. In summer, this dessert can be made almost every day. Its base can be not only shortbread cookies, but also a sponge cake layer. If desired, some of the strawberries can be blended together with the cottage cheese, and then you will get a strawberry-curd layer. The pastry is ready. Serve it to the table.

Prepare the listed ingredients.

Crush the shortbread cookies almost into crumbs. Melt the butter and mix it with the cookie crumbs.

Place into the mold, slightly covering the sides, and level it out while pressing it down. Place the mold in the refrigerator for 20 minutes.

Pour 50 ml of boiling water over 10 grams of gelatin and stir thoroughly. Let it sit for 5 minutes to bloom, then stir again.

Into a deep container, put the cottage cheese, pour in the cream and the gelatin liquid, and add 100 grams of granulated sugar. Do not reduce the amount of sugar, because gelatin slightly “takes away” sweetness! Purée everything with an immersion blender for about 3–4 minutes.

Clean one-third of the berries by removing the stems, rinse them, and cut them into medium-sized cubes. Add them to the curd mixture.

Remove the mold from the refrigerator and fit a cellophane collar, or line the sides with plastic wrap. Pour in the cottage cheese mixture and place the mold back in the refrigerator for about 1 hour.

Remove the stems from the remaining strawberries, cut them in half, and place them in a saucepan or cauldron. Add the remaining sugar and simmer for about 5–7 minutes over moderate heat.

Dissolve the remaining gelatin in 50 ml of boiling water and leave for 5 minutes, then stir again. Pour it into the strawberry mixture and let it cool slightly.

Pour the strawberry mixture onto the cottage cheese layer in the pan and place everything back in the refrigerator for about 1–2 hours.

After the specified time, remove the mold from the refrigerator and carefully take it off, removing the cellophane ring.
