
Strawberry cheesecake
Description
The dish is prepared without unnecessary complications. The strawberry cheesecake is made without flour. For the cheesecake base, we will use ready-made meringues. Cream cheese can be replaced with ricotta. And it's best to use fresh, sweet strawberries. The finished dessert can be served immediately.

1. Wash the strawberries, set aside 5-7 berries for decoration. Remove stems from the remaining berries and blend them with a blender.

2. Pour several tablespoons of cold water over the gelatin. Let it sit for 5 minutes. Then pour 150 ml of boiling water over it. Stir. Add sugar to the whipped berries.

3. After lightly beating the strawberries with sugar, add the water with gelatin. Blend again with a blender.

4. Place the mixture made from water, strawberries, and gelatin into the refrigerator for half an hour to thicken. In a large bowl, mix the cream, vanilla, cornstarch, and beat in the eggs.

5. Beat the mixture with a mixer or whisk until smooth.

6. Preheat the oven to 200 degrees. Line the bottom of a springform cake pan with parchment paper. Crush the meringues by hand.

7. Place the crushed meringues at the bottom of the mold. This is the base layer of the strawberry cheesecake.

8. Pour the cream mixture over the meringue layer.

9. Bake the cheesecake at 200 degrees for 10 minutes, then reduce the temperature to 150 degrees and continue baking for another 40 minutes. As soon as the cheesecake surface sets (no longer liquid), turn off the oven. Leave the cheesecake in the turned-off oven for another 10 minutes.

10. Leave the cheesecake, removed from the oven, in the pan until cooled.

11. Spread a layer of strawberry mousse over the cooled cheesecake. Smooth it out. Cover with foil and refrigerate for several hours (preferably overnight).
