
Strawberry cupcakes with whipped cream

1. Cut the butter into cubes. In the bowl of a food processor, combine flour, sugar, baking powder, egg yolks, and salt.

2. Mix. Add butter and zest, if using, and mix again until crumbly. Add 2/3 cup of cream and mix until smooth.

3. Place the dough onto a lightly floured work surface, knead a few times, then roll out into a circle about 16-17.5 cm in diameter and 2-2.5 cm thick. Using a sharp knife or a cutter, cut out rounds and place them on parchment paper on a baking sheet. Chill in the refrigerator for 20 minutes (up to 2 hours).

4. Preheat the oven to 175 degrees. Brush the tops of the cakes with the remaining cream.

5. Lightly sprinkle the biscuits with sugar.

6. Bake until golden brown, 18-20 minutes. Flip halfway through cooking.

7. Wash the strawberries and cut them into 4 pieces. While the biscuits are baking, mix the strawberries, sugar, and lemon juice together in a bowl. Let stand for a few minutes.

8. Cut the ready-made buns in half horizontally, place strawberries on the bottom halves, top with whipped cream, and cover with the upper halves. Serve immediately with the remaining whipped cream.
