Strawberry galettes made with cottage cheese dough
Description
Perfect with tea and coffee. The word "galette" translates from French as a dry flat cake. They were originally prepared for sea expeditions and journeys. But add a berry or fruit filling to this cake – and you'll get a delicious dessert. Serve cooled or slightly warm.
Instructions
- 1
Step 1

Prepare the necessary ingredients.
- 2
Step 2

Start by preparing the dough. Rub the room-temperature butter with 1 tablespoon of sugar, a pinch of salt, and vanilla sugar.
- 3
Step 3

Add the cottage cheese and rub again until smooth.
- 4
Step 4

Mix the sifted flour with the baking powder using a spoon – and you'll get a fairly coarse crumb.
- 5
Step 5

Pour in 1 tbsp of cold milk and knead the dough. If necessary, add a little more flour. Roll the dough into a ball, place it in a bag, and refrigerate for 30 minutes (or longer).
- 6
Step 6

After the dough has cooled and set, divide it into 3 or 4 equal parts.
- 7
Step 7

Roll out each piece into a flatbread.
- 8
Step 8

Now you can prepare the filling. I don't recommend making it in advance, as strawberries release juice very quickly. Cut the strawberries into pieces.
- 9
Step 9

Gently mix with sugar and starch.
- 10
Step 10

Place in the center of the flatbreads.
- 11
Step 11

Form the galettes by lifting and pinching the edges of the dough.
- 12
Step 12

Place 2-3 small pieces of butter on each tart and bake in a preheated oven at 180 degrees for 25-30 minutes.
- 13
Step 13

Let the crackers cool completely and dust with powdered sugar.
