Sugar-Free Strawberry Jam

Description
A homemade winter preserve. Wonderful jam, and very healthy too. 1. Rinse the strawberries thoroughly under running water. Remove the stems and cut away any damaged spots. 2. Purée the berries in a blender and transfer to a saucepan. 3. Add the honey and grated peeled apple. Stir and bring to a boil. 4. Then reduce the heat and let simmer for 15 minutes. Skim off foam as it forms. 5. Pour the finished jam into containers, cool, and refrigerate. Stored this way, the jam keeps for about 2 months. If placed in the freezer, it lasts up to 6 months. You can use it as an ingredient in desserts, as a garnish, or simply enjoy it with tea. Jars keep for up to a year in a cool place.
