Strawberry puree

Description

A simple way to put up preserves for later. We're used to making winter purée from vegetables and fruits, and few people make it from berries. Yet it's simple and very tasty. The purée is portioned into sterilized jars that are washed thoroughly and then sterilized by any method. Metal lids should be boiled over medium heat for 5–6 minutes. It's best to store the purée in the refrigerator or a cool cellar. The jars keep for up to a year in a cool place.

    Prepare all the necessary ingredients for making strawberry puree.

    Sort through the strawberries and remove any spoiled or bruised berries. Wash the berries, drain them in a colander, and let all the water drain off completely. Spread them on a towel and let them dry.

    Remove the green husks.

    Place the berries in a jam-making bowl and mix with the sugar.

    Leave the bowl at room temperature for 3 hours so the berries release their juice.

    Place the strawberries over low heat and bring to a boil.

    Cook everything for 5 minutes, skimming off the foam.

    Blend everything in a blender until smooth puree. Return the puree to the heat, bring to a boil, and cook for 2 minutes.

    Spread the strawberry puree into sterilized jars and seal tightly with the lids. Turn the jars upside down, wrap them, and leave until completely cooled. Turn the finished puree right side up and put it away for storage.
