
Cranberry sauce with wine
Description
The sauce takes just a few minutes to prepare. I'll explain in more detail below. Serve chilled or at room temperature.

Prepare all the ingredients.

If using fresh cranberries, wash and sort the berries. Transfer them to a heavy-bottomed saucepan, add a couple of tablespoons of water, and simmer the berries until soft.

Then strain through a fine sieve.

Pour wine into a heavy-bottomed pot. Add cloves, bay leaf, and peppercorns. Bring to a boil and simmer over low heat for 10–12 minutes. Then remove the spices from the pot.

Add the cranberry purée, orange zest, and juice, and mix everything together. Bring to a boil and simmer over low heat.

The sauce should reduce by half and thicken. At the end, add sugar and salt to taste.
