
Cranberry cocktail with vanilla
Description
The drink is quick and easy to prepare. Preheat the oven to 180 degrees. Place the cranberries in a large skillet and set aside. In a medium saucepan, bring syrup, wine, sugar, vanilla, lemon zest, pepper, and salt to a boil, stirring occasionally. Pour this mixture over the cranberries. Cover tightly with foil and bake until the cranberries become soft, about 10 minutes. Transfer the cranberries to a bowl, add the liquid, cover, and let cool completely. Bring 1/2 cup of cranberry purée and sugar to a boil in a small saucepan, stirring until the sugar dissolves. Reduce heat to low and simmer until the liquid is reduced by half, about 6 minutes. Strain the liquid through a fine sieve into a bowl and let cool completely. The syrup can be stored in a sealed container in the refrigerator for up to 3 days before use. Set aside 40 cranberries. Blend the remaining berries with the syrup in a blender. Thread 10 cranberries onto each of 4 decorative skewers. Pour 1/4 cup of purée and 1/4 cup of syrup into each of four glasses and stir. Garnish with the skewers and add sparkling water and ice. Serve chilled.
