
Cranberry Kissel
Description
The drink is quick and easy to prepare. You can make the kissel all year round, using either fresh or frozen berries. This method preserves almost all the vitamins, as they are hardly subjected to heat treatment. Always use enameled cookware to prevent oxidation. Serve chilled.

Prepare all the necessary ingredients for making cranberry kissel.

Sort the cranberries, rinse them, and mash the berries into a puree. Squeeze out the juice and set it aside in the refrigerator for now.

Place the pressed cranberry pulp in a saucepan and pour in water. Put on medium heat, bring to a boil, then immediately remove from heat.

Strain the decoction and add sugar, stirring until dissolved.

Pour off a little of the broth, let it cool completely, and mix with the starch. Place the pot over medium heat and bring to a boil. Immediately, stirring constantly, gradually pour in the diluted starch until smooth. Bring to a boil, cook for just one minute, then remove from heat.

Let the cranberry jelly cool to a warm state. Then gradually pour in the cranberry juice, stirring until a smooth drink is obtained.
