
Cranberry-orange cookies
Description
Perfect with tea and coffee. Delicious cranberry-orange cookies are very easy and quick to make. Instead of cranberries, you can use dried cherries, apricots, or prunes. You can turn flour, sugar, and cold butter into fine crumbs using a blender or by hand. To do this, grate the cold butter on a grater, then mix it with the flour and sugar. Grate the zest from the orange, using only the yellow part. Keep in mind: the more zest you add, the stronger the aroma of the cookies will be. You may need slightly more or less juice—add it gradually. The dough should come together into a ball but still remain slightly crumbly. Do not use egg white in this recipe, as it will make the cookies tough. The dough can be stored in the freezer for up to two weeks. Do not overbake the cookies, even if they seem underdone. Otherwise, instead of tender, crumbly cookies, you'll end up with hard ones. Let the cookies cool completely before removing them. They are very fragile when hot. Serve cooled or slightly warm.

Place the cranberries in the blender bowl, add 2 tbsp sugar, and blend the cranberries until they are chopped into small pieces.

Wash the orange thoroughly under hot water with soap and a brush. Dry it well, then grate all the zest using a grater.

Using a blender, mix together the flour, sugar, and cold butter until crumbly.

Add the cranberries and zest to the flour mixture. Mix well.

Add the yolk and juice. Quickly knead the dough. If it crumbles too much and won't come together, add a little more juice, a bit at a time. However, the dough should not be dense—only slightly crumbly.

Divide the dough into several parts and shape into sausages. Wrap each one in plastic wrap and refrigerate for 20-30 minutes.

Take out the dough and cut it into 0.5 cm thick rounds.

Place them on a baking sheet lined with parchment paper and bake in a preheated oven at 180°C for about 12–14 minutes, until the bottoms of the cookies are golden brown.
