
Lamb Klephtiko
Description
I don't know why the Greeks gave this dish its name, but one thing is clear to me—it's incredibly delicious. I prepare it both for everyday meals and festive lunches, and now I'm happy to share with you a simple recipe for lamb klephtiko. Making this dish is really not difficult at all, and the process doesn't take much time, so you'll easily and quickly handle everything. So, gather all the necessary ingredients and let's get started making lamb klephtiko at home.

Step 1

First, rinse the lamb under running water and cut it into portion-sized pieces, placing the meat into a deep bowl. Now, regarding the marinade, there are two types. The first one, which I used, involves dissolving the juice of half or a whole lemon in water, mixing it with paprika, pouring this mixture over the meat, and letting it marinate for 2–3 hours. The second marinade option, where we dilute red wine (50–70 ml) in water, is also quite good, but I prefer the first one.

While the meat is marinating, peel the potatoes and onion.

Cut the potatoes into thick slices.

Cut the onion into large rings.

When the meat has marinated, take a fairly wide baking dish and line it with several layers of foil (about 5-6). Place a single layer of potatoes on the foil, drizzle with olive oil, and sprinkle with spices and salt.

On top, place onion rings and insert garlic cloves into the empty spaces. Then add a layer of lamb, which we also salt, season with spices, and pour with lemon juice.

Then we make another layer of potatoes, again spices and a little salt (don't overdo it).

Next, we carefully wrap our dish in foil and place it in a preheated oven at 270 degrees Celsius for one hour. Then, we reduce the temperature to 180-200 degrees and continue braising the meat with potatoes and onions for another 3-5 hours.

It takes a bit longer, but it's worth it, as the meat becomes incredibly tender and soft. So, remove the dish from the oven, carefully unfold the foil, and sprinkle the kleftiko with fresh herbs. Enjoy your meal, everyone!
