
Potato dumplings
Description
The recipe won't take much time. To prepare these dumplings, choose white potatoes with a high starch content. Young potatoes are not suitable. Boil the potato dumplings in salted boiling water over low heat to keep them intact. Serve hot.

Wash the potatoes thoroughly with a vegetable brush and boil them in their skins in salted boiling water until cooked. Peel the potatoes and grate them finely.

Place the grated potatoes in a mound on the table, sprinkle with a small amount of sifted flour, make a depression in the center, crack an egg into it, and add salt.

Add soft butter and (optional) 1 tablespoon of vodka, knead into a smooth, homogeneous dough, adding the remaining flour.

Divide the dough into small portions and roll each into "sausages" with a diameter of 4-5 cm. Work on a surface well-dusted with flour to prevent the potato dough from sticking to the table or your hands.

Cut each "sausage" into 2 cm long pieces. Shape the dumplings as desired.

In a large pot, bring salted water to a boil and add the dumplings, not too many at once. Stir the dumplings with a wooden spatula and wait until they rise to the surface.

Place the dumplings with a slotted spoon into a preheated deep dish, mix with your choice of sauce, and serve immediately.
