
Classic Chicken Curry

Heat the oil in a pan and sauté the onion, ginger, and garlic until the onion becomes soft.

Add spices - red chili powder, coriander powder, garam masala, and turmeric.

Stir thoroughly and sauté over low heat until browned.

Add the chopped tomatoes and salt.

Mix well.

Simmer covered for a few minutes. Then remove from the heat, set aside, and let cool.

Once everything has cooled down, transfer it to a food processor and blend until smooth.

Place the skillet (the one you just used to cook the vegetables, no need to wash it), add a tablespoon of oil and pieces of chicken, mix well.

Continue stirring the chicken until it begins to brown.

When the chicken pieces are well browned, add the vegetable paste.

Stir thoroughly and sauté for a few minutes.

Add 1/2 cup of water and coconut milk, mix well.

Bring to a gentle boil. Cover with a lid and cook over medium heat for 10 minutes, until the chicken pieces become tender and the sauce thickens slightly.

In a separate skillet, add 1 tsp of oil and lightly sauté mustard seeds. Add a little shallot, curry leaves, and a couple of chopped chilies. Fry until the curry leaves become crispy, then pour this mixture over the chicken curry. Done. This dish goes well with rice.
