
Classic mashed potatoes
Description

You might be surprised, but authentic, classic mashed potatoes are made without milk :) As far as I know, professional chefs in fine restaurants always use this particular mashed potato recipe—and theirs always turns out light, airy, and completely lump-free. Peel the potatoes, wash them, and cut into large pieces. Place in a pot, cover with water, and put on the stove. Cook until done.

When the potatoes start sliding off the knife, they're done. Remove from heat, drain the water.

Without adding any liquids, use a mixer to grind the potatoes.

When the potatoes are almost completely mashed, you can add a little bit of cream and whip once more.
