Classic Pesto Sauce

Description

Preheat the oven to 175 degrees. Spread the nuts on a baking sheet and bake until golden and fragrant, tossing occasionally, for 5 to 8 minutes. Let the nuts cool completely. In a food processor, combine the toasted pine nuts, basil, Parmesan, and garlic; season with salt and pepper. With the processor running, slowly pour in the olive oil. Blend until smooth. If you are not using the sauce immediately, cover it with plastic wrap and refrigerate—it will help the pesto retain its bright color. The pesto can be stored for up to three days.
