
Classic mascarpone cheesecake
Description

1. You'll need this small set of ingredients to recreate the recipe in your kitchen. Turn on the oven at the beginning of the process and let it preheat to 180 degrees.

2. Crush the cookies into crumbs and mix with butter. Add a pinch of salt and, if the cookies are not very sweet, a little sugar. Transfer the crumb mixture to a heatproof baking dish and use your hands to shape it into an even crust with edges. Place the dish in the oven for about 8–10 minutes.

3. While the crust is browning slightly, prepare the filling. Beat cream cheese with sugar and vanilla extract. Add mascarpone and beaten eggs. The result should be a smooth, airy mixture.

4. Remove the crust from the oven and reduce the temperature to the minimum. Spread the cream, smooth it out. Place the mold into a larger mold, filling the larger one with water. Return to the oven and bake for about 90 minutes.

5. When the cheesecake is ready, carefully remove it from the pan and let it rest for about 3-4 hours before serving.
