
Classic English muffins
Description
Tasty baked goods for the whole family. Muffin batter can be mixed in the evening, placed in a bowl, covered with plastic wrap, and put in the refrigerator. In the morning, set the batter in a warm place for 15 minutes, then the muffins can be baked in the oven or fried in a skillet. English muffins can also be served with a poached egg. Serve warm or chilled. Perfect with tea.

Prepare the necessary ingredients. Dissolve fresh yeast and sugar in warm milk, place in a warm spot until a foamy cap appears. Sift the flour into a bowl.

In the center of the flour make a well, pour in the risen yeast, add an egg, melted butter, and salt. Knead a soft dough that does not stick to the hands. Cover the dough with a bowl, leave it in a warm place for 1 hour. Punch down the dough. Sprinkle the work surface with cornmeal, also sprinkle the dough with flour and roll it out into a sheet about 1–1.5 cm thick.

Using a glass or a round cutter, cut out circles.

Transfer the pieces onto a baking sheet lined with parchment paper. Place them to bake in a preheated oven at 180 degrees for 15 minutes.

Or heat a heavy-bottomed skillet with a small amount of oil. Over medium heat, fry the muffins on one side for about 5 minutes. Flip, cover with a lid, and cook for another 3 minutes. Remove the lid, fry for another 2 minutes until golden brown.

Take it out of the oven and serve warm or cooled.
