
Clafouti with apples
Description
Clafoutis is a French pie very similar to our beloved charlotte. The difference lies in the amount of flour—clafoutis contains less flour, making the pie resemble a sweet omelet. Combined with fragrant apples, raisins, and cognac, it creates an exquisite dish that delights all taste buds. Moreover, the small amount of flour is beneficial for your figure.

Step 1

Sift the flour through a sieve. Add sugar and a pinch of salt. It's best to use naturally the highest grade flour. After all, this is a French pie.

Gradually pour the milk into the flour, stirring carefully to dissolve any lumps. Then add the eggs and beat everything with a mixer until you get a smooth, fluffy mixture. And don't forget to add vanilla for flavor!

We wash the apples and peel them. Actually, this step is optional (the taste won't be worse with the skin on). But according to the French recipe, everything should be tender and airy. Slice the apples thinly.

Before starting to cook, it's better to soak the raisins in brandy in advance. If you're making the pie for children and are concerned about their reaction to alcohol, it's best to omit it altogether. However, I will follow the traditional recipe and add some piquancy using brandy. Place the apples into a greased baking dish, sprinkle them with the raisins. Mix the remaining alcohol into the batter. Pour the liquid batter over the apples and bake in the oven at 180 degrees Celsius for 45–50 minutes.

If you want your cake to be more filling and dense, simply add more flour to the batter. But then it will become a charlotte. In our case, the main ingredient in the batter is eggs. Remove the cake, let it cool under a towel. This cake has an omelet-like texture and should appeal to refined palates.
