
Clafoutis with cherries
Description
Homemade baking for tea. Explaining what clafoutis is isn’t exactly easy — it’s better to just make this French dessert. It’s something between a casserole, a thick pancake, and a pudding all at once. Still, clafoutis is quite easy to make — the main thing is to mix the batter properly; everything else is fairly straightforward. The dessert works well as a treat with tea or coffee. Serve warm or chilled. Perfect with tea.

Rinse the sweet cherries, pat them dry, and remove the stems and pits.

Beat the sugar and eggs until smooth and homogeneous.

Add the sifted flour to the mixture and beat well again.

Add the milk and whisk until smooth. The result should be a batter of a quite runny consistency.

Grease the baking dish with butter and spread the cherries on the bottom.

Pour the liquid batter over the top.

Bake for 35–40 minutes at 210 degrees. Let cool slightly before serving.
