Description
A nutritious and delicious Azerbaijani-style omelet is called "kukyu." Many confuse it with scrambled eggs, but when preparing scrambled eggs, the eggs are not beaten together with chopped herbs; instead, they are cracked directly into the pan! Kukyu turns out flavorful and aromatic—perfect for breakfast.

Prepare the listed ingredients.

Rinse the greens. Dry with a paper towel and finely chop. Cut the spinach into thin strips.

Crack the chicken eggs into a bowl, preferably using eggs from free-range hens—they have brighter yolks. Season with salt and pepper.

Beat the entire contents of the container for 1-2 minutes.

Heat the skillet on the stove over high heat. Pour in the vegetable oil and reduce the heat to low. Pour the egg mixture with herbs onto the skillet and spread it evenly.
