
Armenian Kofta
Description
The recipe won't take much time. When I first saw this amazing dish at our Armenian friends' place, I immediately became enthusiastic about preparing it myself—the unusual appearance and presentation of these wonderful little balls really appealed to me. After thoroughly asking for the recipe, I finally decided to try making it myself a couple of weeks later, and surprisingly, it turned out great. Now I'm eager to share my experience with you and tell you how. Serve hot.

Step 1

First, we need to mince the beef into a paste-like consistency by either passing the meat through a meat grinder 5-6 times or processing it in a food processor. During grinding, gradually pour milk or water into the meat. Once the meat mixture becomes homogeneous, transfer it to a bowl and add egg, flour, minced onion, cognac, salt, and pepper.

Now all this needs to be thoroughly kneaded for 20 minutes.

Pour water into a saucepan, place over heat, and add salt. Divide the prepared mixture into 4 equal parts, then divide each part into 4 smaller parts. Moisten your hands with water and shape the meat mixture into small balls. When the water in the saucepan comes to a boil, carefully place the prepared meatballs into it.

We boil for about half an hour and don't forget to remove the foam that forms.

After the time has elapsed, the balls can be removed from the water and sliced.

Serve kufte hot, poured with melted butter.
