
Chinese sponge cake

Prepare the ingredients according to the recipe list.

First, prepare a metal baking pan and line it with parchment paper. To help the paper stick to the sides of the pan, brush them with butter. Preheat the oven to top and bottom heat at 150°C.

In a bowl for kneading the dough, sift the flour, add salt and vanilla sugar, and mix.

Separate the whites and yolks of four eggs. Pour the whites immediately into a mixing bowl. Mix the yolks with a fork or whisk until smooth.

Pour the milk into a saucepan, add the butter cut into pieces, and heat over medium heat until the butter melts; do not let it boil.

Slowly pour the hot milk with butter into the flour mixture and mix until smooth. Then add the egg yolks in portions, pouring and stirring them into this mixture.

Place the mold in a container, for example a deeper baking sheet. Pour in hot water at 80 degrees, and place in the oven to bake.

Remove the sponge cake from the baking pan by pulling on the paper. With this preparation, the sponge cake comes out of the pan very easily. After you take it out of the oven, the sponge cake will sink a little, but that is not a problem.
