
Chinese onion pancakes
Description
The recipe won't take much time. Flaky flatbreads with aromatic green onions and a crispy crust will make a worthy substitute for bread, even at a festive table—this dish will appeal to everyone. I recommend frying them in vegetable oil, but if necessary, you can fry them in a dry skillet—then they will be less flaky and less golden. You can add not only Provence herbs to the dough, but also Italian herbs or a mixture of basil, oregano, and marjoram.

1. Finely chop the onion. Mix the sifted flour with salt, olive oil, and Provencal herbs. Gradually add boiling water in small portions, stir with a spatula, then knead on the table.

2. Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes. Roll out the dough into a thin sheet (2-3 mm). Sprinkle the dough with olive oil, spread green onions over it, and roll it up into a log.

3. Cut the roll into 12 pieces, pinch the sides and shape into balls. Roll out each ball again into a thin flatbread.

4. Fry the pancakes on both sides in heated vegetable oil until golden brown.
