
Chinese meat buns
Description
Homemade baked goods for tea. Don’t be put off by the long list of ingredients—most of it is various spices that give the buns their distinctive flavour; if you like, you can swap them for similar ones or completely different ones :) But then, of course, the taste will shift a bit, because Chinese meat buns mainly differ from ordinary Russian meat pastries in that they contain many spices unfamiliar in Russian cuisine. The pastries turn out very tasty and unusual, and first-time tasters are usually delighted. Try making them yourself—you’re unlikely to be disappointed :) Serve warm or chilled. Perfect with tea.

Step 1

Take a small bowl and mix in it the sugar, yeast, and warm water. Let stand for 15 minutes. Then, in a large bowl, mix the flour, egg, butter, salt, and the yeast mixture.

Knead the dough by hand until elastic, then cover it with a towel and leave it in a warm place for about half an hour. The dough should double in size.

Now for the fun part: we turn to the pork. Finely chop the pork. For the marinade, combine minced garlic, grated ginger, honey, vegetable oil, soy sauce, wine, pepper, salt, sesame oil, and spices. Add the chopped meat to this marinade and let it marinate for 30 to 40 minutes.

When the pork has finished marinating, pan-fry it in a skillet in olive oil until done. When the meat is ready (cooking will take about 5 minutes), add finely chopped green onions.

Cut the risen dough into 12 equal pieces, rolling each one into a ball.

Roll each ball of dough flat, place the filling in the centre, then pinch the edges shut to shape round buns.

Grease a baking sheet with oil and place the Chinese buns on it. Bake for 15–20 minutes at 180°C until golden brown.

The buns are ready! Let cool and serve.
