The process of making a Chinese onion pancake begins with preparing the dough. First, mix salt, flour, and boiling water in a deep bowl. Start kneading the dough once the mixture has cooled down. Knead by hand for about 5 minutes until the dough becomes elastic and springy. Then, set it aside in a warm place for half an hour, covered with a towel.

After the time has elapsed, remove the dough and divide it into three parts. Roll each ball into a flat sheet with a rolling pin, then salt it and drizzle with a small amount of oil. Roll out the dough, then roll it up into a log and shape it into a shell. At this stage, the dough needs to be rolled out slightly again.

Brush the rolled-out dough with oil again and sprinkle chopped green onions evenly over the entire surface. Repeat these steps with all the flatbreads. As a result, you should have flatbreads filled with plenty of oil and onions inside.
