1. First, pour the kefir into a deep bowl and add semolina. Gently mix everything and let it sit for 10–15 minutes so the semolina can swell. 2. Meanwhile, sift the flour together with baking powder or baking soda. 3. Separately, beat the egg with sugar until fully dissolved. 4. Add vegetable oil and the egg mixture to the kefir. Mix well. For sweet baked goods, you can add a pinch of vanilla or cinnamon, for example. 5. Gradually add the flour, stirring the batter continuously. It's difficult to specify the exact amount of flour, so it's important to monitor the consistency. 6. The best way to use this yeast-free sour batter at home is to make a pie with filling. In this case, the dough can be soft and slightly runny. If you plan to make other types of baked goods, you might need a bit more flour. It's better to let the finished dough rest for 15–20 minutes, allowing it to relax and the flour to fully hydrate, before proceeding directly to baking.
