
Sweet and sour bread
Description
Homemade baked goods for tea. Fluffy, tasty bread is easy to make at home too. Remember to start by making a sponge, letting it rise, then adding all the ingredients and giving the dough time to proof again. Only after that can you bake golden bread. The baking is ready. Serve at the table.

Prepare the specified ingredients. Use fresh yeast or replace with 5 grams of dry yeast.

Crumble the yeast into a deep container—a bowl or salad bowl. Add half of the sugar and the salt to the same container. Optionally, add dried ground spices and seasonings. If they already contain salt, reduce the amount of salt in the recipe.

Pour in warm water at 35°C, not hot, so the yeast activates well in it and does not get killed by the heat.

Add one third of the top-grade wheat flour to prepare the sponge.

Mix everything thoroughly and whisk until you have a thick, viscous sponge.

Cover the container with plastic wrap and leave at room temperature for no more than half an hour. During that time, it will triple in volume.

Add the remaining half of the granulated sugar, or replace it with floral honey if desired.

Pour in the vegetable oil and mix everything with a whisk or a fork.

Add the remaining wheat flour and knead a soft, not stiff dough. It will even be slightly loose — and that’s exactly how it should be.

Grease the pan with vegetable oil and place the prepared dough in it. Cover with plastic wrap and let rise in a warm place for 30–60 minutes.

After the specified time, remove the plastic wrap, preheat the oven to 240 degrees, and place a tray of boiling water on the bottom of the oven. Put the pan on the middle rack and bake for 20 minutes.

Then reduce the heat to 200 degrees and bake the bread for another 20 minutes. Remove it from the oven still in the pan and mist it with warm water, immediately covering it with a towel. This will keep a hard crust from forming and make the bread easy to slice.
