Mackerel quiche

Description

Perfectly pairs with tea and coffee. A quiche is an open pie that can be made with any filling (both sweet and savory). If you don't happen to have some of the ingredients from the recipe in your fridge—no problem, they can easily be replaced with others (spinach with parsley or cilantro). Even those who are indifferent to fish will happily devour this dish. So, let's get started

Instructions

  1. 1

    Step 1

    Step 1

    1. Prepare all the necessary ingredients for making the pie. The fish for the pie should not be raw, so boil or fry it.

  2. 2

    Step 2

    Step 2

    2. Take the butter out of the refrigerator in advance. Cut the softened butter into pieces.

  3. 3

    Step 3

    Step 3

    3. Sift the flour in advance to enrich it with oxygen, which will make the baked goods light and airy. Mix the flour with the butter.

  4. 4

    Step 4

    Step 4

    4. Knead the shortcrust dough. If the dough sticks slightly to your hands, it's not a problem. It should be soft and light, so don't add extra flour. Wrap it in plastic wrap and place in a cold place for 60 minutes to rest.

  5. 5

    Step 5

    Step 5

    5. Grease the baking dish with oil or line it with parchment paper. After an hour, take the dough out of the refrigerator, roll it into a circle slightly larger than the pan, and place it in the dish. Put the dough into a preheated oven at 180°C and bake for 15 minutes.

  6. 6

    Step 6

    6. While the dough is baking, start preparing the fish. Remove the skin and carefully remove all the bones, making sure not a single one remains.

  7. 7

    Step 7

    Step 7

    7. Rinse the spinach under cold running water to remove dirt and other debris. Cut the greens into large pieces, removing the tough parts.

  8. 8

    Step 8

    Step 8

    8. Remove the dough base from the oven and place pieces of fish with chopped spinach inside the mold.

  9. 9

    Step 9

    Step 9

    9. Take the cottage cheese out of the refrigerator, mash it with a fork or by hand, add a little salt and mix. Place the prepared cottage cheese into the baking dish with the spinach and mackerel.

  10. 10

    Step 10

    Step 10

    10. Into a separate bowl, crack the eggs one by one, add milk, season with a little salt and pepper (or add any other spices to taste). Mix thoroughly.

  11. 11

    Step 11

    Step 11

    11. Pour the ready egg-milk mixture over the dough with the filling.

  12. 12

    Step 12

    Step 12

    12. Spread the mixture slightly so that it evenly covers the entire filling.

  13. 13

    Step 13

    Step 13

    13. Place the pie in the oven at 180-200 degrees Celsius. Bake for about half an hour. Check the pie for doneness with a toothpick. If it comes out clean, the pie is ready—remove it from the oven. Let it stand for 10-15 minutes before slicing.
