Pumpkin and green onion quiche with cheese topping

Description

The recipe won't take much time. The classic quiche filling is made from cream and eggs. Sometimes cream is replaced with sour cream. And if you use soft processed cheese and gentle Adyghe cheese as a base, the result will be just as good. It can be served with tea or coffee.

    It is convenient to prepare shortcrust pastry in a food processor. Put the sifted flour with baking powder, bran, sugar, and salt into the bowl. Then add the cold butter cut into pieces and pulse in short bursts until the mixture resembles crumbs. Add the egg and 2 tablespoons of sour cream.

    Knead until the dough comes together into a ball. Place the finished dough in a bag and refrigerate for about 10 minutes.

    Roll out the dough between two sheets of parchment paper into a thin circle no more than 1 cm thick.

    Remove the top sheet of paper, place the dough with the bottom sheet of paper into the mold, press and trim the edges, prick the bottom with a fork. Put in the freezer for about 10 minutes.

    For the filling, peel the pumpkin, cut it into small cubes, and mix with finely chopped green onions. Use only tender feathers, without stems.

    For the filling, place pieces of Adyghe and hard cheese into the food processor bowl, add sour cream, eggs, and a can of processed cheese. It's best to use mushroom or creamy flavored processed cheese. Blend the mixture until smooth.

    Place a little filling on the dough in the pan. Evenly spread the pumpkin and onion on top. Season with salt and pepper to taste, and sprinkle with oregano.
