
Tomato and Mozzarella Quiche
Description
The recipe won't take much time. Baking pies is an ordinary task—if, of course, you're experienced. If not, read my recipe for making a quiche with mozzarella and tomatoes! This type of baked dish isn't particularly heavy. Unlike yeast dough, where bacteria cause the dough to rise, a quiche has more filling than dough. It can be served with tea or coffee.

Step 1

Soften the butter. Add sifted flour and 4 tablespoons of sour cream to it. Add a pinch of salt. Mix thoroughly with a fork.

Knead a firm dough from flour, butter, and sour cream. Roll it into a ball and wrap in plastic. Refrigerate for about 40–60 minutes.

Meanwhile, let's prepare the filling. Cut the cooked sausage into cubes. You can use any other sausage, or pieces of meat or poultry. Break the eggs into a bowl and whisk them together with sour cream. Season with salt to taste. Grate the mozzarella. Wash the cherry tomatoes. Cut the olives in half.

Take the dough out of the refrigerator. Roll it out into a thin layer. Place it into a heatproof dish. Take a fork and prick the dough all over. Put olives and sliced sausage on top. Pour over the egg-sour cream mixture, add cherry tomatoes, and sprinkle everything with mozzarella.

Place the pie in the oven at 180 degrees for 40 minutes. After 25 minutes, reduce the temperature to 150 degrees. Remove our quiche from the oven. The aroma is absolutely intoxicating!
