
Quiche with cheese and tomatoes

Prepare all the ingredients.

Combine the flour, cubed butter, salt, and one egg.

Knead the dough, shape it into a ball, wrap it in plastic wrap, and place it in the refrigerator for 30 minutes.

Then spread it in a butter‑greased pan, shaping high edges with your hands. I have a round pan 18 cm in diameter; you can also use a rectangular one, about 25 × 13 × 6 cm.

Place parchment on the dough and add a weight (peas or beans).

Bake at 200 degrees for 7 minutes, then without a weight for another 5 minutes.

For the filling, beat the eggs with salt. Add cream, grated cheese, paprika, and pepper to taste.
