
Quiche with Leeks and Bacon

Prepare the ingredients.

Put the flour and butter cut into pieces in the blender bowl and process until you have fine crumbs.

Mix cold water and egg.

Put the butter–flour mixture in a bowl, make a well in it, pour in the water and egg mixture, and add a pinch of salt.

Knead the dough by hand; do not knead it for long. Shape the dough into a ball, put it in a bag, and refrigerate it while you prepare the filling.

Pour 2 tablespoons of olive oil into the pan.

In another skillet, fry the finely chopped bacon.

Prepare a baking pan (27 cm in diameter). Make a “French shirt”: this means brushing it with butter, dusting it with flour, and shaking off the excess flour.

Roll out the dough into a sheet, transfer it to the tin, shape the sides, prick the bottom with a fork, and place in the freezer for about 15 minutes.

Continue preparing the filling: grate the cheese on a grater.

Mix the milk, 3 eggs, and a pinch of salt, then add nutmeg.

Mix half of the cheese with the sour cream (or cream).
