Description

The pastry bakes simply and quickly. French cuisine is famous not only for refined desserts but also for simple, hearty open pies called quiches. A leek and bacon filling is a classic pairing. I am sure this pie will win everyone over with both its looks and its taste. The recipe is very straightforward, and the dough turns out beautifully.     Prepare the ingredients.

    Put the flour and butter cut into pieces in the blender bowl and process until you have fine crumbs.

    Put the butter–flour mixture in a bowl, make a well in it, pour in the water and egg mixture, and add a pinch of salt.

    Knead the dough by hand; do not knead it for long. Shape the dough into a ball, put it in a bag, and refrigerate it while you prepare the filling.

    Pour 2 tablespoons of olive oil into the pan.

    Add finely chopped leek and sauté for about 5 minutes.

    Prepare a baking pan (27 cm in diameter). Make a “French shirt”: this means brushing it with butter, dusting it with flour, and shaking off the excess flour.

    Roll out the dough into a sheet, transfer it to the tin, shape the sides, prick the bottom with a fork, and place in the freezer for about 15 minutes.

    Continue preparing the filling: grate the cheese on a grater.

    Mix the milk, 3 eggs, and a pinch of salt, then add nutmeg.
