Salmon and broccoli quiche
Description
Homemade pastries for tea. I'm going to share my recipe with you now. Broccoli is a healthy vegetable. This type of cabbage isn't very popular here, but you can make lots of delicious and nutritious dishes with it. For the fish filling, you can use other types of canned fish, such as sardines or tuna. With this amount of dough, you can make 3 pies like in the photo. If you're baking 3 pies, you should increase the amount of filling. This dough works perfectly for making meat rolls and pizza. The baking is ready. Serve at the table.
Instructions
- 1
Step 1

Sift wheat flour into a mixing bowl.
- 2
Step 2

Dissolve 1 tablespoon of dry yeast in a glass of water (250 ml). Add 1.5 teaspoons of salt and 1 tablespoon of sugar. Pour the resulting mixture into the flour.
- 3
Step 3

Knead the dough. I use a mixer with a dough hook attachment to knead the dough. At the end of kneading, add 3 tablespoons of vegetable oil to the dough. Cover the bowl with plastic wrap and let the dough rise (1.5–2 hours).

Step 4

Transfer the salmon to a bowl (I'm using canned salmon). Mash it with a fork. If you find any bones, remove them.
- 5
Step 5

Knead the risen dough. Divide it into 3 parts. Roll out one part into a flat sheet and place it into a baking dish. Put the prepared salmon and broccoli on top of the dough. If you are using fresh broccoli, boil it in salted boiling water for about 5 minutes. I used frozen broccoli. Freezing replaces the boiling process, so such broccoli doesn't need to be boiled. There's no need to thaw it either. Place the cold broccoli directly onto the pie.

Step 6

Mix 1 cup of milk and 2 eggs. Add salt and spices. Pour the resulting mixture onto the pie, making sure it stays within the dough boundaries.
- 7
Step 7

Grate the hard cheese on a grater. Spread it over the pie.
- 8
Step 8

Preheat the oven to 200 degrees and bake the pie for 30 minutes.
- 9
Step 9

Serve the salmon and broccoli quiche at the table.
