
Quiche with Eggplants
Description
If your household is full of meat lovers, just add some browned ground meat to the filling. But in general, this recipe has a very successful dough and a delicious creamy cheese topping on its own, which will work with any filling. No eggplants? Simply replace them with mushrooms, fish, or any other vegetables to your taste. I’m sure it will turn out just as good.

Prepare all the ingredients.

Combine the flour, butter cut into pieces, egg, and salt. Mix everything with a spoon, then knead with your hands into a soft dough that does not stick to your hands. Shape it into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

Cut the eggplants into arbitrary pieces, but not too small. Fry in vegetable oil until done. Add salt to taste.

Spread the dough with your hands over the greased pan, forming high edges.

Prick the bottom with a fork, place parchment on top, and pour beans onto the paper to act as a weight. Bake in an oven preheated to 210 degrees for 10 minutes.

Then remove the paper with the beans, lower the temperature to 180 degrees, and bake for another 10 minutes.

Place the fried eggplants.

Sprinkle the eggplants with chopped green onions.

Arrange the sliced tomatoes on top. If the tomatoes are very small, it is enough to cut them into two parts.

In a separate bowl, mix the sour cream, heavy cream, eggs, grated cheese, and ground pepper. Add salt to taste and pour everything over the filling of eggplants, onions, and tomatoes. Bake in the oven at 180°C for about 20–30 minutes.
